You may wonder why pancakes need to be healthy? Well, why not?
More than being healthy I simply love the texture and taste of this pancakes rather than the ordinary pancakes. Oats are nutrient-rich grain with more protein than most other cereal grains. Its high in antioxidants and fibre. Oats aids in weight loss. The beta-gluten found in oats is shown to help keep you feeling full for longer. Research suggests it helps to reduce the risk of heat disease, lower cholesterol, balance blood sugar and promote a healthy gut.
I don't know about you, I am a huge pancake fan, and I have tried Buttermilk pancakes, normal plain flour pancakes, Banana pancakes etc..... out of all of them this is my favourite. If you try this recipe let me know your thoughts.
Ingredients (6-10 pancakes)
117g Organic Oats flour
3/4 Cup of Almond milk
1/2 Cup of water or as needed (you can use buttermilk for more flavour but optional)
3 Eggs
1 Tbsp of Cinnamon powder
7-8g of Organic Coconut flour
Salt as needed
Butter as needed
1 Banana (if you like it to be sweet) optional
Method
Shred the oats in a food processor or blender until they reach a flour-like consistency.
Mix the oats, milk, and water together and leave it to soak for 10 min (secret to the light and fluffiness of your pancakes)
Add an egg and stir.
Add the coconut flour and cinnamon, and mix well until combined.
Heat a pan over medium heat and put some butter. Drop batter in spoonfuls onto the pan and cook until pancake is browned on one side and bubbles appear. Flip and brown on the other side. Repeat with remaining batter and enjoy!
