Sri Lankan Cashew nut slice.
Sri Lankan kaju aluwa is a fragrantly spiced, nutty sweetmeat which is often eaten during Sinhalese New Year celebrations.
Ingredients
600 g Roasted Rice Flour
600 g Sugar
2 cups Cashew nuts (Add less or more according to your taste)
1 tblsp vanilla
1/3 cup water (You can add up to 1 cup of water)
6 cardamom pods crushed and use powder,
Method
First roast the rice flour in a pan on low heat. Be careful not to burn the flour. Keep it aside
Roast the cashews slightly and keep it aside
Prepare the board.(Flour a board with roasted rice flour)
In a separate pan add sugar and water with cardamon and vanilla. Boil it untill sugar dissolve And becomes a thick sirup. (About 12-15min) add the cashews and mix well.
Take it out and let it cool down a little, until It’s cold enough to handle. Add the rice flour little by little until you get a stiff dough. Quickly transfer that on to a prepared board and spread it and roll it into square shape. leave to cool down for 5min. Then cut it in to a desired shape. In this case rhombus shape.
Note: You have to work very fast from start to finish as the paste gets hard very quickly, once adding the rice flour.
