The Sri Lankan Pol Roti is like a flat bread, usually served for breakfast or dinner. It is also sometimes used for the evening tea time. Its a mixture of 3 simple ingredients. Plain flour, Coconut and Salt. There is so many varieties you can make this pol roti based on the basic recipe.
Basic Recipe
Ingredients
200g of plain flour
100-150g of coconut (can be fresh/desiccated or frozen)
salt to taste
1 egg optional (adding eggs make it really soft)
water as needed
Method
In a large bowl add all the ingredients. Gradually mix water little by little and mix well until it all comes together until it forms a sticky dough. Kneed the dough with your hand until the consistency of bread-dough, non sticky. shape into small bowls. On a luncheon sheet,(easy to remove after flatten, as you don't need extra flour or oil) flatten the dough with a rolling pin or by hand into desire shape and thickness. In a medium hot pan put on your shaped roti and cook on both sides until it's well browned.
Serve hot with any Curry or Lunumiris. You can make this in advance, stack it like in the last picture above and freeze it for up to 2-3 months.
