Almond flour Pittu (KETO FRIENDLY/GLUTEN FREE)

Just 3 ingredients ready in 15minutes and super healthy (Keto and Gluten free) Better on your gut and waistline. Very filling and truly delicious. You ca also customise this recipe by adding any Julian cut vegetables and meat and make it pittu kothu.


Ingredients

1 cup Almond flour


3-4 tblsp of Coconut flour

½ cup fresh grated coconut (frozen)

little water as requires

Salt to your taste

2 to 3 cups water for steaming and you require a pressure cooker with a pittu attachment. (if you don’t have this, no problem still you can make this with a flannel/muslin cloth and a steamer.


Method

In a medium bowl add almond flour, coconut flour, shredded coconut salt and start mixing with pouring tiny bit of water. Make tiny balls like you would make ordinary Pittu with rice flour. Due to almond flour being really soft and clumpy, you don’t need much water. As when you steam everything will come together and combine well.

Put the mixed mixture into Pittu attachment and steam this in the pressure cooker. Once you can see steam coming out from the lid of the attachment (about 1-2min) take it out and serve hot. With condiments and curry’s.

If you use a steamer and flannel cloth: place the flannel/muslin cloth inside the steamer. Then add the mixture into this cloth. Close the lid and steam for 2-3minutes.

Goes well with spicy fish/lunu miris and coconut milk
