Famous Mango Curry (Sue’s style)

This is a mouthwatering, sweet and sour dish which you wont be able to resist. Traditionally made with Raw mangoes, picked when just mature, are also known as “Green mangoes.” 


Cooking time: 30-40 minutes

Serves 4 



Ingredients:

  • 3-4 half ripe or raw mangoes with the seed (cooking green mango)

  • 3 tbsp coconut oil 

  • 2-3 garlic cloves crushed 

  • One half of a medium red onion sliced

  • 1 tbsp mustard seeds

  • Spring of curry leaves

  • 1-2 inch piece of Pandan leaf

  • 1 inch piece of cinnamon piece

  • 1-2 sun dried chilli cut into small pieces

  • ½ tsp of turmeric 

  • 1 - 2 tbsp sugar (optional, if the mango is roped and sweeter then you dont need to add sugar)

  • 1 ½ tsp crushed black pepper

  • 1-2 tsp of paprica powder

  • 1 tsp of chilli powder (according to your spice level)

  • ¼ heaped tsp salt or to taste

  • ½ tsp of chilli flakes (optional)

  • ¼ cup water



Method


Wash and cut the mangoes to the desire size.

In a separate bowl add the cut mango, turmeric, chillie powder, black pepper, sugar, paprika, chilli, salt and mix all together.

Heat a medium size pan or clay pot under medium fire. Heat the coconut oil and fry the mustard seeds. Cover and let the seeds pop. Next reduce heat add garlic, onion,curry leaves, pandan leaf, cinnamon, dried chilli and fry till fragrant. Add the prepared seasoned mango and water mix well and cook (about 20-30 mins) under low heat until it changes colour and cooked. Finally add some chilli flakes, mix and serve warm with rice.
