Appa Kothu

Who would have thought of making Kothu with hoppers?  Well, I did!

I invented APPA KOTHU.

I don't know about you but, I hate throwing away food! Today when I opened the fridge I found some leftover Appa (hoppers) from last night. And most of you will think, it's dry and flaky can't eat this anymore and it goes straight to the bin. I thought it's such a shame to throw this away and I came up with the idea of making kothu with it.

Very easy, quick and it's delicious.

Ingredients


  • 1/4 tsp Mustard seed

  • 2 Dry chili

  • Any type oil or butter as needed

  • 1 Sprig of curry leaf

  • Carrot cut into Julienne

  • Spring onion leaves cut into Julienne

  • Sugar snaps finely sliced

  • Flat green beans finely sliced

  • Finely sliced red onion

  • 5 cloves of garlic

  • Salt & ground pepper as required

  • 1/2 tsp of chilli flakes

  • Splash of Rice wine

  • Splash of Sesame oil

  • Splash of Oyster sause

  • Left over Appa (hoppers) as required.


Method


Cut Appa into fine pieces. 👇

In a pan put some butter and fry the Appa slightly until its crispy, don't over cook this as its already cooked and if you do then the Appa will become too lumpy and soggy. Once fried keep it aside. If you use fresh Appa you can skip this step.


In a separate pan heat oil. Add mustard seeds. Once the mustard stop splattering add the dry chili (broken), curry leaves, garlic, onion and sauté until the onion turns translucent (golden brown). Now add the carrots and sauté for 1min. Add flat green beans, sugar snaps and mix well. Now add some rice wine, oyster sauce, salt, pepper, chilli flakes and sesame oil and mix well for about 1 min. Finally add the fried hoppers & spring onions and mix well. Remove from the heat. Remember not to over cook this, which easily can be done. Basically you want your vegetable to have a crunch in them and hoppers not to be soggy too much. You can enjoy this with anything. Any curry or simply fried sausages will compliments this dish really well! Or you can eat this on its own.

Its a perfect breakfast dish.
