Cauliflower rice


So cauliflower itself is undoubtedly healthy. Cauliflower rice is a high-fiber, low-carb alternative to real rice that's also packed with a number of antioxidants and vitamins. It's an incredibly simple dish, which is always a good sign for a food's nutrition.

Serves 3- 4 people

Ingredients

  • 1 Medium Cauliflower

  • 1 tbsp of Olive oil

  • Salt and pepper for seasoning


Method


Wash the cauliflower and towel dry. Make sure your cauliflower is fully dry. Chop the cauliflower into large pieces. You can include the cores, save the leaves for another use. Place the cauliflower pieces in a food processor and pulse until it has the texture of rice. Or simply grate it.


Work in batches if necessary and don’t over process or it will get mushy. 

In a large skillet, heat 1 teaspoon of olive oil over medium heat. Add the cauliflower and sauté until heated through, about 3 to 5 minutes. Season with salt, pepper. You can flavour the rice with anything you fancy. You can stir- fry this as a fried rice by adding vegetables and meat. Or simply add some spring onions. Which ever the way you make this I can guarantee that it’s going to taste delicious.
