Ghee Rice


This very easy to make Ghee Rice is known as Dun thel bath/Yellow rice/kaha bath traditionally made in Sri-Lanka for special occasions. True flavour of this rice comes from the type of Ghee you use. Typically it is the organic Buffalo Butter which is widely available to purchase in local shops in Sri-Lanka. Not to worry, you can still make this delicious rice with the any ghee you can find local to you in your own country.



Quantity for 4 people

Takes 15-30 min

Rice Preparation:

4 cups of Basmati rice (soaked in water for 20 minutes and drain, dried)

Ghee oil 80 ml (about 3 tablespoons)

1 Onions, sliced 

Spring of Curry leaves 

1 Rampe leaf

1 Lemongrass stem 

5 Cardamoms, crushed 

5 Cloves

1 Cinnamon Stick 

1 tsp of Whole Black pepper

1 tsp Turmeric powder 

4 cups of boiling hot water

Garnish and Serving:

For the Garnish, optional:

1 handful of fried Sulthana 

2 handfuls of Cashew nuts, whole, fried to golden 

1 Onions, fried until golden


Method


Secret to this rice is that the rice grain needs to be dried really well before frying.

Heat the ghee oil in a thick bottom pan or in a rice cooker.


Add onions, curry leaves, rampe, lemongrass, cinnamon, cloves, cardamoms, pepper and sauté till the onions are golden.

Add rice, turmeric and stir for 2 minutes till the rice is well sautéed and fried.


Add the boiling water and cook the rice until it's done! If you feel the rice needs more water, you can add more when the rice has absorbed all the water.


Garnish and Serving:


Finally remove the lemongrass and rampe. Sprinkle fried cashew. sulthana and fried onions stir softly and serve hot with your choice of curries.
