Hasel free, oven free delicious ribs ready in 30min. This delicious recipe inspired by my dear friend, Mrs.Dona Nilanthi Samarathunga.
Ingredients
For about 4 slabs baby pork ribs
If you prefer Sweet and Savory Marinade:
1/2 cup dark soy sauce
1/4 cup water
1/4 cup rice wine vinegar (or white wine)
3-4 tablespoons sesame oil
1 tablespoons of fish sauce
1-2 tsp of oyster sauce
4 tablespoons of honey (or golden syrup, black treacle)
4 tbsp chopped garlic
2 tbsp finely chopped ginger
1/2 medium onion finely chopped
½ to 1 teaspoon black pepper (depending on your spice level)
1-2 tsp of chilli flakes (optional)
1-2 tsp of sesame seeds (optional for garnish)
For Spicy Marinade:
Add the extra 1-3 tsp of chilli powder and 1 tsp of paprika and increase the black pepper accordingly to your spicy level.
Method
For the marinade
Prepare the ingredients for the marinade of your choice. Mix all of the ingredients well. Except the honey.
Preparing the ribs
Cut each slab of the ribs and separate them. Rinse the ribs and drain. Coat the ribs well with the marinade.
Cooking the ribs
Take a large heavy bottom saucepan, add all the marinated ribs onto it, close it with a lid and cook it for 15-20min until all the ribs are cooked and change in colour. At this point you can see the marinate has reduced and become a sauce.
Add in the honey or alternative golden syrup/black treacle, mix well. Add in the crushed chilli and garnished with sesame seeds and serve hot. Best taste one day after cooking.
You can also cook this in the oven if you wish but takes longer.
Preheat the oven to 325°F.
Line a baking sheet with aluminum foil. Arrange the ribs, meat side down. If using the mild marinade, pour some marinade into the baking sheet or dish. Cover the baking sheet/dish tightly with aluminum foil. Bake them for 1.5 hour (2 hours if you want fall off the bones tenderness). Remove the foil cover. If used the mild marinade, you will have a lot of liquid in the baking sheet/dish. Pour it out into a sauce pan along with any reserved marinade, and bring the liquid to a boil and reduce by about half or until it turns into a thick consistency. you can add some red wine to give more flavour when reducing the liquid.(optiona)
You don't need to do this with the spicy marinade as it doesn't have as much liquid. Brush the sauce onto the ribs.
Finishing the ribs
Option 1: Change the oven setting to broil (500°F) and preheat for a few minutes. Then broil the ribs until the ribs are lightly caramelized and charred, about 5 minutes on each side. Baste the ribs with the sauce a couple of times while broiling.
Option 2: Preheat the grill and grill the ribs over medium heat until the ribs are lightly caramelized and charred, about 5 minutes on each side. Baste the ribs with the sauce while grilling.
