Mango Chicken Stir-fry

This is a quick, simple and easy dish when you have no time to cook.

Serves 4


Ingredients


  • 2 Chicken breast (or 4 to 5 thighs, sliced into strips or bite-size chunks) 

  • 1 Fresh ripe mango peeled and cut into cubes or frozen about 1-2 cups (depending on how much mango flavour you like)

  • 1-2 tbsp coconut oil

  • 2-3 crushed garlic cloves

  • ¼ cup of Basil leaves

  • Hand full of pumpkin seeds (optional)

  • 1-½ tsp of chilli powder (if you like it to be spicy or you can just use paprika only)

  • 1 tsp of paprika

  • ½ tsp of black ground pepper

  • Salt to taste

  • Fried cashews (optional for extra crunch)


Method


Heat the coconut oil in a wok or heavy bottomed skillet over medium-high heat. Fry the prepared chicken until they cooked and fried on both sides for about 10 minutes. Add the garlic and let it cook for 30 seconds. Add the mango, pumpkin seeds, all spices, mix well and cook for further 5-10 minutes. Finally add the chopped basil leaves, stir and serve hot.

You can serve this simply with rice or simply enjoy on its own with coconut yogurt for a healthy version.
