Murunga curry (Drumstick Curry)

Murunga also known as Moringa, has amino acids in them that can promote happy hormones. These are some amazing benefits. To name a few more, this vegetable contains many healthful compounds such as: vitamin A, vitamin B1 (thiamine), B2 (riboflavin), B3 (niacin), B-6, folate and ascorbic acid (vitamin C), calcium, potassium, iron, magnesium, phosphorus, zinc. It is also extremely low in fats and contains no harmful cholesterol. I like to keep this simple and cook it for less time as possible to lock all the goodness of this vegetable.


Ingredients


  • 2-4 Large Drumsticks 

  • 1 Onion finely sliced

  • 2-3 Garlic cloves crushed

  • Spring of Curry leaves

  • 1-2 Green chilli split in half

  • ½ teaspoon Turmeric powder

  • 1 teaspoon of curry powder

  • 200ml Thin coconut milk 

  • 100ml Thick coconut milk 

  • Salt according to your taste


Method


Cut the drumsticks into 3-inch pieces and rinse them well. I use them as whole drumstick pieces, but you cut them into half if you wish.

Put all the cut drumsticks into a clay pot or cooking pot. Add all ingredients except the thick coconut milk. Mix everything well, switch on the flame and cook covered under the high flame for 5 to 7 minutes till drumsticks turn tender.Take off the lid, add the thick coconut milk mix and cook under medium flame for 1 minutes. Take off the heat. Taste and adjust the salt if needed, because drumsticks already have some saltiness.
