Nelum Ala Curry (නෙලුම් අල)

Nelum Ala Curry (නෙලුම් අල) known as Lotus root is another classic traditional and healthy dish served mostly in the rural villages where farmers work in Sri-Lanka. It's widely available in the villages and there's so many varieties to this dish. In U.K it's difficult to come buy with fresh lotus root. I found frozen lotus root in Chinese supermarket (See Woo). This recipe is based on how to make it with frozen roots.



Ingredients

250g of frozen lotus root slice's, defrosted rinsed and drained 1 cup of fresh or canned tomatoes, coarsely chopped 1 large chopped bombay onion or 15-20 small red shallots thinly sliced. 1 sprig of curry leaves (about 10 leaves)

3-4 chopped garlic cloves

2-3 green chilli thinly sliced ½ cup thick coconut milk ¼ tsp turmeric ¼ tsp chili powder ½ tsp paprika 1 tsp curry powder

1 tsp of coconut oil or any oil ½ - 1 teaspoon salt according to your taste. The frozen Lotus root 👇



Method

In a pot or saucepan, (I use clay pots to do all my cooking. simply because it adds a unique flavour to your dish as well as health benefits) add all the spices (tumeric,chili,paprica,curry powder and tomato) combine it all and gently simmer for 15 minutes over very low heat.


In a small pan, add the oil and stir-fry the shallot, garlic and curry leaves until it's golden. Add the fried mix into the lotus root and stir well. Finally add the coconut milk and salt to taste and stir well. Simmer it for another 5 minutes. Take off the heat.

Serve hot with rice.
