Nelum Ala Curry (නෙලුම් අල) known as Lotus root is another classic traditional and healthy dish served mostly in the rural villages where farmers work in Sri-Lanka. It's widely available in the villages and there's so many varieties to this dish. This recipe is for healthy Lotus root chips. You can either deep fry or bake this. In U.K it's difficult to come buy with fresh lotus root. I found frozen lotus root in Chinese supermarket (See Woo). This recipe is based on how to make it with frozen roots.
Ingredients
500g frozen Lotus root (defrosted, drained and towel dried)
Oil for deep frying
Sample Seasoning
It can be any flavour you like.
Simply add Salt
Lemon & Herb rub - (paprika, chilli powder, black pepper, lemon powder or lime juice, garlic powder, mustard powder, basil and celery)
Cajun seasoning
Peri-Peri seasoning
Method
In a frying pan add the oil for deep frying. Once the oil is hot, deep fry the lotus roots for 1/2-1 min until it’s golden. Beware not to burn this. Once fried drain the oil and rub the seasoning on the lotus roots. You can also bake this on 180-200C oven for 10-15min until its golden.
Serve with a desired dip or eat it on its own.
