Sri-Lankan Patties

(Deep fried pastries)

 

This is one of my popular recpies, inherited from my mother.


Ingredients for dough


4 1/2 cups of all-purpose flour

1 1/2 tsp salt

1/2 cup of hard butter 1 1:4 cups of cold soda or sprite


Method


In a large bowl mix the flour, salt and butter together.

Rub the butter into the flour and pinch into small pieces using your fingers until the mixture resembles coarse crumb. Add the ice cold sparkling water, a few tsp at a time, until the mixture forms a ball. Pat into a ball and flatten slightly.Put clean film over it and refrigerate for 1 hour.


While waiting you can make the filling.

you can use any filling you like.


Ingredients for filling


1/2 lb boil and mashed potatoes (skins removed)

1 can of flaked salmon/tuna/meat/vegetables. anything you fancy.

2 chopped onions

1 tsp of mustard seeds

garlic according to your taste

1/2 tsp of chilli powder

1/2 tsp of black pepper

Salt to your taste

Spring of curry leaves

Chopped Green chillies according to your spice level & 1/2 squeezed lime or lemon


Method


Stir fry the mustard seeds, onions, garlic and curry leaves until golden brown in little oil on a medium heat. Add the mashed potatoes and flakes of fish and mix well. Add salt, chilli , black pepper, green chilies and lime juice according to your taste and mix well. Set aside to cool.


Now the fun bit of making the patties......,,


Dust some flour on a board and roll out the dough to about 1/8 inch thicknes. Cut out circles, using a circular lid or pastry cutter. Spoon some filling onto the centre of the circle and wet the edges of the circle with little bit of water, then fold into half-moon shapes And seal edges by pressing with a folk.





After, deep fry till golden brown and serve hot!
